When I was growing up I wanted to be a childhood assistant. Right now I not work in the kindergarten. I think in the future I will be work a childcare assistance.
I liked play with children very much. When I played with children, they laughed and smiled every time. I think children like play too much.
I liked take care of children. I have two nieces and sometimes I took care of them and helped to them. I think every child will be happy, when someone take care of them and help to them.
When children are very happy I am happy too. They are will be happy when they play, have fun and laughing. I very like when children are very happy.

Childhood Dreams

I would like to tell you what I wanted to be when I was a child. When I was growing up I wanted to be a librarian, a music school’s teacher and the accountant. Let me tell you about each of my wishes.
First I wanted to be a librarian. There is a lot of libraries everywhere in my country, Russia. Every cities and schools have the libraries. Pupils and other people came to the library took books on different subjects. I was loved a large clean room with big windows in it. There are a lot of shelves full of books. I was loved to go to the library to read book, and also saw now worked librarians. I imagined myself a librarian.
Then as I was growing, I wanted to be a teacher at a music school, because U myself studied in the local music school. There was a lot of different musical instruments. I loved to see the work of teachers and wanted to be as teacher of accordion took as my teacher-Alexandr Horunjy.
Finally I wanted to be the accountant. My main reason for this was to fill out forms that I loved to write, the digits to account, I liked to work with papers.
I did not become any of those people. All my plans failed. I became teeth technician. I was worked in the dental office. I had my own table with a lot of different instrument. By contents of my job was reparation of crowns and dentures for people. I had worked with wonderful doctors, people, and course children proud their Mom.

Dinner Party in Guatemala

I would like to tell you how we entertain guests in my country. In Guatemala, we have different cultures. In my state lived many people Indians, they speaking different languages, is not Spanish, the name is Kakchikel. In my family my Grandfather’s is the same people. For dinner party is depend the occasion, in Christmas the people cooked tamales for drink ponche. Ponche is sun drink make with different fruits, it is very delicious. The table is decorated with sunflowers. For Christmas, the guests come and eat, and pray to God. The other important thing is after might night, the families cooked delicious soup the name is Kakik, all families eat it. I miss this time in my country.

Voting is your Right and Responsibility

Why does voting matter? Why is it important? Let me tell you how I feel about it.
When I was 18 years old, I first time voted. But in Vietnam my country from 1975 was communist country, not freedom, voting was only formal, not good for people in nation.
I’m 52 years old; I came to U.S near 5 year ago and not yet citizen. I think if I become a citizen, I will go to vote, because voting very important for any nation love freedom.
I would like to tell everybody, if you lived in a communist nation you would feel how important freedom and voting are.

Fall Break

Let me tell you about my fall break last week.
We went to visit my brother, my sister-in-law and my niece. They are living in Worthington of Minnesota 3 hours drive from Blaine, Minnesota.
On the first time after they moved from Minneapolis we never went to visit them so they are very happy. We were very happy too.
Also we like the area around their apartment. It was very green and quiet. I really enjoyed being there.

In my country when the people are sick, they go to the hospital. The first person that they speak before the doctor is a nurse. This job is highly respected because the people talk to them with respect. The nurse helps the doctor, takes your temperature and asks you about how you feel. If you want to be a nurse you need to go to the school and learn many topics about the human body. I think that it is very hard to study, but the nurses are very happy to learn a lot of topics about how to help other people. The salary isn’t much but is good. My mom is a nurse and I think that she is the best nurse that I know. I wouldn’t like to be a nurse but I think that this job is very important in the community, because they help other people to feel better.

My Fall Break

I would like to tell you about my fall break. I walked in the park, I read books in English language, and I spoke English with my friends.
Every evening I walked with my friendly friends in the small park. That nice park is not far away from my apartment. In the park we saw beautiful birds.
On the last week every afternoon I read some interesting books in English language. I borrowed those books from the library. Some friends listened to how I could read.
I spoke English with my neighbors and friends. I tried to speak English well. My nice neighbors and friends were happy when I spoke English with them.

I would like to tell you about my fall break. I liked this time, because the weather was nice, and I had a lot of free time. I did not things. I was reading a book, I was listening to music, and playing with my children.
On Sunday morning I got up at eight o’clock and went to the park with my children. We played soccer and other games, we rode the bikes.
Usually I don’t have free time for reading, but on Sunday I had. I could read the Bible. I got many advices from the Bible for my life.
In the evening I was listening to music. Because when I am listening I am quit and I feel well. My favorite songs are about God.

FALL BREAK

I would like to share how I spent my fall break. I went shopping, walking and I was watching TV.
On Saturday morning I got up at 7:30 and made some breakfast for my family. I made some pan cakes and scrambled eggs. After having our breakfast my son and I went shopping at Wal-Mart and at Target.
The weather was very nice during the week. We used to go to the park for an evening walk and we enjoyed walking.
During the night time I watched TV, because I didn’t have to go to the class next day. I really enjoyed watching different shows.
Finally my fall break was past really quickly. I enjoyed my fall break very much. I wish this break could come every other month.

My Fall Break

I would like to tell you about my fall break. I read a book, cooked and went exercising.
Every day when I finish cleaning the house, I walked 40 minutes in the gym, the exercise is very important for my health. After I cooked the dinner I enjoyed listening to music.
The days in the break I needed to clean the house I cooked different food, I cooked Chinese food, baked cookies and Italian food, I found the recipes in internet.
At night at 8:00 pm, I watched TV. with my husband the favorite series, at 10p.m.m we went to my bed I was reading the book best seller one hour.
The finish week, my routine is different, I went with my family a walked around the lake maybe in the Lake Calhoun to walked, after maybe went to eat at a restaurant.
Any times my husband and me, the Sunday all the day watch TV. in pants, and eating pizza and sandwiches. I did not cook, for me it was relaxing.

I would like to tell you about my fall break. I cooked, listened to music and played the piano. I taught my daughter to read.
I like to cook for my family. When during the fall break I cooked different especially tasty delicious food that I don’t have time to do during other weeks. My family and friends were glad to eat. When I relaxed from different housework I listened music, from TV, radio, sometimes played the piano or accordion, and of course I listened with pleasure to my oldest son- Vladimir, playing the guitar.

In my country I was a truck driver about 10 years. This job is very hard, but I’m always happy, because I could help everybody pick up anything, come to anywhere. They study for a truck driver for a short time [about one month].It is very easy to find a job. Somebody doesn’t like that, but I like it because I can know and visit some other cities, have a lot of friends. My family is better for a life from that job. One day of my childhood

I was born in the northern part of Russia, where there was the much forest. I liked forest very much, and I like it now. Every New Year, our family had to decorate a Christmas tree. Father bought it or the oldest brother sawed and brought it from the forest. One year happened so that no one brought an evergreen tree. I decided to saw and bring it myself. We lived not so far from the forest. I took a saw, an axe, a piece of bread, and a little salt. When all was prepared, I set on my goal. All was well, but deep in the forest was a prison for dangerous people, and there lived many wild animals such as wolves, bears, and lynx. Sometimes prisoners run away from the prison and killed citizens who were in the forest and took their clothes. Sometimes people were good food for wild animals. Although I was only eleven years old, I understood well what would happen. In this time I couldn’t imagine our room without a Christmas tree in the first day of New Year. I was running and walking on white, soft, deep snow. I listened to the birds sings. I imagined how I would bring my surprise for everybody in my family, because my parents didn’t know where I went. I was very happy. I spent a long searching for a tree, but one tree was better than another one. I stopped only then when it begins to dusk. I was going home. But where is my way? Where is my path? With each minute it became darker. I thought “I would be a good snack for animals in winter.” I was not fat and big, but I had about 20 kilograms of bones in my body at that time. I understood I lost my way home. I don’t remember how long I roamed. My wonderful, lovely forest slowly became my grave. Suddenly I smelt smoke of cigarettes, and I began to hear voices of the people. Who are they? May by they are prisoners. I didn’t have a choice how to go to the them. There were two strangers.

My Childhood Memories

I remember when I was a little girl, I, my parents, my aunt, uncle, and my cousin rode to a vacation in the mountains. We road in to a small city Zakopane. We stayed in a hotel. The weather was cold and it was snowing. I felt good, but my cousin was very sick. She had high temperature and she was sad. In the next day my cousin felt better, but she still had high temperature. I played with her. She was very happy all day, but at night she had very high temperature and she had trouble breathing. She was very sad and she was crying. My aunt called the emergency, and my cousin and her parents rode to the hospital. I visited my cousin, but for a short time. She lay on the bad in the hospital. She was happy because I brought candies for her and she felt better. She lay in the hospital for a week. When she left the hospital, we rode home. At home we felt very good and my cousin was healthy. I remember this vacation because it was a very sad vacation.

When I came here, I didn’t know even any words about English, I just spoke Russian, and I had headaches when the people said something. It was like a big noise, and it was hard.
Also it was hard, the different time, we came afternoon, but in Russia it was morning. I needed time to adjust, to get used to things here.
I was surprised when I saw the clouds, it was closer to the ground, than in Russia. Also I was glad surprised, when I saw highways, and roads in the cities, it’s better than in my country.
The first time when I tried the food, it was different with Russia, I didn’t like it. I didn’t like milk, bread, sausages, and almost all of vegetables. Few time later I adjusted to eat that, and something from that I begun to like it. There I was really pessimistic about everything.

“MY FIRST YEAR IN MINNESOTA”

I would like to tell you about “MY FIRST YEAR I MINNESOTA”. My name is Qurat-ul-ain.
I am Pakistani woman and I came here to the U.S.A in October 30, 2006 with my husband from Pakistan. There were three things that really surprised me.
First thing was the weather, in Minnesota. I came here is too cold and snowy for me. In my country is too hot but sometimes I enjoyed the snowy season.
Second thing the food, we eat at home because restaurant and other food places are different. But I was really surprised at the many kinds of food in one grocery store.
Third thing the languages, in my country people speak, read, and write in Urdu. In Minnesota most of the people speak English. I came here first time I was confused how to speak English. I didn’t know.
Finally, whenever I had a problem I worked hard. I have been living here for one and a half years but sometimes I especially miss my parents and my brother. As usual I like Minnesota and I am enjoying it with my family.

My First Year In Minnesota

My name is Margarita. I am from Russia.
I arrived from my country with my family on June 1, in 2007.
My native language is Russian I didn’t understand English, but now I am learning this new language with pleasure.
What can I say about weather in this state? I think-the weather is same between my native Rostov Region and Minnesota, where l live now.
Food in this country is different with food in my country. First time was difficult to drink milk, to eat bread. But later I got used to it.
Now I got used to leave here. I like to go shopping and to choose American food and at home I cooking hamburger, different salads, cakes, cookies.

My First Year in Minnesota

I would like to tell you about my first year in Minnesota. I passed for a very hard time becouse I arrived to Minneapolis in 2000 from Mexico with my husband and my two children.

My oldest boy Rolando was eight years old and my junger one Javier j Jr was four. I arrived with my sister Lorena. She was living in a house in south Minneapolis. There were two thinks that really surprised me. The big store and the language. The next day I went shopping with to the cub food store.

And I was very surprise for the big store. I missed my small town from I came from. Because in my small town the stores are too small. And I missed my family to especially my parents. When I when to the clinic to take my oldest son to take his shots for school it was a very difficult time for me.

Because nobory was speaking Spanish and I felt lake in another world. I told my son o my gash! Where are we? But my son told me don’t worry mom, I will learn the English language soon and I will help you to speak. When my son told me that I wanted to cry and I give him a hug.

I thoutht it is important come to school to learn English too like my children specially for an emergency. Now I can read, write and speak little. I feel happy now. I miss my family and my town but I feel happy living in Minneapolis.

Women in the Military

In my opinion women in the military is a bad idea. I think that women must stay at home.
I believe that women must to be with her children. Children need mom. Children don’t need soldiers.
In my opinion women have a lot of things to do at home. She must watch her children, to do homework with children, cooking, cleaning and to do more little things what can to do just mom. I think that men in the military are a good idea. I think that military is place for men, because men are stronger than women.
I believe that women can to do a lot of things in the Army, but in my opinion, if woman has family and children she must be with her family, with her children, and look nice for her husband.

I think that illegal immigration is very bad, because many people come into the country in very bad conditions. They don’t have money. They don’t have permission to work. The people live in conditions that are not humane.
When the people break the law, they don’t have opportunities to have good work.
Many people lose their family in their country, because they don’t have money and permission to come together.
The people need I.D., work, money, house etc. They live in the shadows.
The most important thing is that many people lose the lives in the attempt.
In conclusion, the countries need the “Legal immigration” so the people come to work.
Maybe the countries will take the control with the immigration, maybe finish the chaos, because the wall won’t stop the people.

Teotihuacan is a wonderful place to visit. The city is beautiful we have many Pyramids.
You can look amazing mural “The Palace of the Jaguar” of the “Palace the Quetzalcoatl”.
This place is visited by thousands and thousands of people every year. This place is magical, and mystical. All the years many archeologists and architects come to this place, because the Pyramids are amazing.
Teotihuacan we have many places really interesting. “The first is Pyramid the Moon”, the second is the Callejon de los Muertos (street of the dead), and The Pyramid the Sun, this pyramid everybody up and take energy, because the history says, you can touch the sun, because it is really tall.
I think the most important is the Templo Mayor (Temple Mayor).
The food is fantastic and delicious. You can eat typical Mexican food.
This place have many souvenirs, you can buy jewelry, big heat and the Azteca calendar.
I hope many people visit this place is really beautiful and interesting.

Iguaçu Falls is situated in the Interior of the National Park of Iguaçu, PR. It is a very interesting place for visit for many reason, it’s between Brazil and Argentina, it’s almost pour out 13 million liters of water per second; you can relax, to test different food and try many adventures.
This place is very quiet; we can relax and listen to the birds around the park, the river below the waterfalls. There are many places for enjoy the picnic on the river border and see another country, Argentina.
The restaurant in this place has many kinds of foods. For example the special is barbecue, because you may pick and choose you spit-roasted meat and the typical Brazilian dish made with black beans, pork, sausage and vegetables. It’s generally served with chopped cabbage, farofa and orange. An essential accompaniment to this food is Caipirinha, one of the most typical alcoholic beverages of Brazil; it’s prepared with slices or chunks of lemon, cachaca, ice and sugar.
There are many kinds of adventures in the park, we can climb the waterfalls, canoe, ride bicycle around the forest, walk down the park close the river and other many adventures.
It’s a big place of my city, in one year them have almost two thousand people of different cultures.

Mothers are important women in the life of a person. I loved, love, and will love my dear momma until the last of my heart. She is a responsible, careful, and good mother because she gave life to 10 children. There was so much noise from each child, but Momma had patience. The gift love, care will never be forgotten by anybody. I remember her warm hands, kind, nice eyes and voice. She had a soft heart; she always worried about us and taught us to be good people. Momma always waited for her husband from work, us from school, or from the army. When we began to work she waited for us from long trips. Too many responsibilities lay on her shoulders every day; she cooked, washed, and dressed each child. If I could speak better English I could tell about the best woman in the world. She is responsible, fair, honest, loyal, patient, sensitive, beautiful, nice, smart, good- my momma! When I finish studying maybe I could write a poem for my momma.

Every morning my mother gets up at 5 a.m. She is very hard-working and punctual. She has a talent to cook food with meat and bake yummy bread. Severity is her character, but it doesn’t hinder her to be hospitable and polite and good-hearted. She likes to help neighbors. She is careful and responsible. Now, she is 75-years-old, but she feels like she is forty-years-old. She gave me life. My mother taught a lot and I am thankful to my mom for everything. I love my mother very much, because she is the best mom in the world!

My mother is a beautiful, friendly, and strong woman. She smiles a lot. I look like my mother; we have the same face. She is very good nurse. When I was a little girl, I was sometimes sick in winter. My mother took care about me; and now she does too. She doesn’t sleep at night and she is worried about my health. I remember how my mother cared about me, when I was a little girl. I know she loves me all the time; and sometimes I forget about that. I understand I don’t listen to her. She is worried about me, when I come home too late. A little later, my nice and good mother forgives me. She can cook very delicious food for me and my father. She waits for me every day to come from school and asks me, “Are you hungry? Did you drive safely from school to home?” I like my good mother’s food very much. She is a very good cook. Now, I can help her at home: clean house, wash dishes, wash and clean clothes. She can make different good things. Now, my kind mother is not tired too much because I help her. I like my mother’s nice smile a lot. When she is smiling, her beautiful face looks better. She is happy about her family. I love my quiet mother, when she is happy. If my kind mother is happy, I am happy, too. She is a good- natured, courteous, and a patient mother. Tiraspol was founded in 1792 by Suvorov on the river Dnestr, near the Black sea in the North-West. The population of Tiraspol is about 150,000 people. The climate is mild, because it’s near the sea. The winter is not very cold, and summer is not very hot. My city has little snow in winter and little rain in spring. Usually it rains in autumn. In my city you can visit museums of Zelinski, Fainicki, Katovski, parks, cinemas, theaters, and many monuments. In the center of Tiraspol, you can see a big monument dedicated to Suvorov. If you go to the west, you can visit an art gallery, next to the museum of Zelinski, who is a big scientist. He is the creator of a gas mask. He also spent time working with oil. In the 20^th century, Katovski founded Moldavian Republic. Fainicki is a popular painter in our city. In summer, you can go to the forest, to the river, to the places of culture, to the parks, and other places. You can visit cinemas, theaters, and a stadium.

My Best Day This Week

I would like to tell you about my best day this week. It was Sunday the weather it was beautiful sunny and warm. The reason that I love Sundays is because I can do everything I want I can rest and get up late. But on Sunday, April 20, 2008, I spent all day in the Mall of America with my cousin Marisol and my sister Rosa.

In the Mall of America we got on several rides. But the most rides I enjoyed it was the roller coaster and the bumper cars. After enjoyed the rides we went to eat pizza end we set for a litter while.

Because my sister wanted to go shopping too. She wanted to buy a dresser for a special graduation party. The first store we went it was Sears, but my sister did not find any dresses that she like it, then we decide go to JC Penney store and she found it, a very nice blue dress.

We arrived back to my home at around seven o’clock my oldest boy was watering the yard while he was reading a book. I really enjoyed all day with my sister and my cousin. For me is very nice to talk to them and go out too. Because I go out only with my husband and my children, and when I go out with my sister and my cousin we do funny things, and we can spend more time shopping.

My Best Day This Week

I would like to tell you about my best day this week. It was this last Sunday. There are many reasons why I enjoyed it so much. The first reason is that my family was together all day; the second reason is that I with my family went to church and the third reason we met with our friends.

I love Sunday because I can have breakfast with husband while we talk about last week, and we can do plans for next week. Every Sunday we have the different plans. This Sunday was so much interesting.

The weather was not nice but I had a nice mood. After breakfast we went to church, there was interesting program. Then we had a lunch witch our friends in the restaurant. There we agreed that we should spend the all time together. We went to the Amusement Park in the Mall Of America. My husband walked there, but I had shopping.

We arrived back to my house at around 8 o’clock. We had a cup of coffee with cake and we watched one of our favorite movies, and then our friends went to home.

I really enjoyed spending my Sunday with my friends and my lovely family. Next Sunday I hope it will be a beautiful weather, and we will spend our together too outside.

We Need Peace

I hope that there will be peace in the world. If there is peace, then I can see my mother, daughters, brothers, and sisters, who stayed in Russia. When there is peace, everybody will live long; and children will be happy. When children are happy, all people are happy, too. If there is peace, you can have money, home, cars, tracks, and more dreams.

I am from Rostov-on- Don. It is in southern Russia. It is on the coast of the river Don. Rostov-on-Don is a very big city. It has about three million people. A lot of people in Rostov-on Don are students from different countries. Rostov has the warmest weather; and it has four seasons. My city has a lot of things to see. There are beautiful parks, many people walk in the downtown. Adults as well as children like water park very much. Rostov-on-Don has nice theatres, museum and a big place for parades. In my house I have a special place. It is my yard. Every morning I go there to look at the green trees.

I see the flowers opening and some yellow butterflies. They fly and sit on the flowers. I hear birds singing in the trees. I smell the green grass and I feel the fresh air.

When the winter is over and spring come I and my husband work in the yard .we plant flowers, tomatoes, and vegetables. We fix some places, so that they look clean and beautiful. Every weekend I go to see them grow, and I am very happy.

The yard is my favorite place because when I am tired of hearing noises on TV, I walk around my yard. I take a deep breath of fresh air. The yard is also important for my family. My children like to play there on weekend.

I want to tell you about my best day this week. It was this last Thursday, April 17. There are many reasons for my enjoyment. The first reason is I love cars. The second is that the weather was warm and the third reason is that I spend the whole evening with my friend, Ruth and will get my dream!

I love cars, but cannot drive yet. I have got the ‘’permit- card’’ and was such happy, because I may start learning to drive.

The weather in that evening was warm. In that day wasn’t rainy. In the end of the day Ruth called me and told her wish- to experience me to drive a car.

We arrived back to my house at around nine o’clock. My children and husband was waiting to me to the dinner, and interested my success, my mood!

I really enjoyed spending evening with Ruth, when I was driving the car. I hope I’ll be good a driver, because Ruth is hard working teacher and I hard working student!

My favorite place is my bedroom. The walls in it are of blue color, like the sky. I like the bed, because it is medium size. I also like the new cabinets. I like the closet, it is of medium size. I talk with my husband about the problems. I take care of my baby every day. My mother cleans the bedroom every other day.

My dream is to get a good job; and then have a small house. I’m a new immigrant here; and I need some money for my family (four members). I would like to get a job as a mechanic or a bus driver because I had about 30 years of experience as the truck driver in my country. I hope somebody is going to help me find a good job. I want to learn English too; because it’s going to help me very much in my future.

I have a dream. My dream is to speak better English. If I speak and understand English, I can talk with a lot of people and go anywhere. I can also get a better job. Right now my English is very bad. I hope I will speak, listen, and write English very well.

My Favorite Place

My favorite place was a big, old city with two million people, who lives there. The name of that city is “Rostov on don”. I liked that city, because I spent a lot of time there. I walked in the center of the city with my friends. I liked looking at the military parade.

There city passing a very long river, which located almost via half country. I liked to look at many boats and ships there, also I liked fishing There. I met there with my friends too. There is a big beautiful bridge via that river. In the center of that city is a big fountain. Around the there are a lot of benches. At that place there were always a lot of friendly people. There was a big park, which called “Park Viktora Cherivichkina”. Near was located another park, close to college. There park called “The Park Name’s Gorkogo”.

These parks were very big. There were lot of monuments, fountains, benches and game places for children. Almost all these monuments told about the second war. There in these parks there was always a big noise, because a lot of tourists were there. I liked arriving there because I spent my best time there, and I left there my young age.

I’m often thinking about that city, because too much important things happened there for me. Although, if I will not go there in future three years, I couldn’t leave my mind about that city. If I knew more English, I could be tell you more about my favorite place.

Things I Like to Do

I want to tell you about my hobbies.

I really like to cook breakfast, dinner and lunch for my parents. When we are done, I clean a table and wash dishes. I cook different food and beverages. My parents don’t like to eat in restaurant, cafes or cafeterias.

My second thing I admire is traveling to other countries for a long time. When I was little girl, I often travelled by train and by boat. I flew on the airplane only one time from Moldova to Minnesota in August 16, 2006. I like to drive fast, because it is fun for me. I would like to have a Jeep car and I like to drive for a long time at night. My father doesn’t like when I drive fast. It makes him nervous. Besides I walk with my father every evening. I don’t live far from Cub Foods and Aldy, so I walk to those grocery stories, I walked a lot in my country; and it is very good for me.

Sometimes I watch TV at night. I like to watch funny movies. I don’t like to watch sports. Sometimes I watch news with my parents. I enjoy Russian movies with Russian translation on the Internet.

Cooking, driving and watching TV are the things I enjoy.

In my country there are many different holidays, and people cook usually special celebration’s food for family, friends, and colleagues.

But now I’ll talk about famous Russian food, which we don’t cook for holidays, but for every day.

About this recipe I know from my Mom. This kind of food is traditional Russian food and everybody loves it. Its name is ‘Borsh’.

Preparation Time: 20 minutes.

Cooking Time: 1 hour, 20 minutes.

Serves: 8

Ingredients:

3 liters water + 1 pound meat

½ pound potato

½ cabbage

2 carrot

2 carrot

½ onion

Dill

Salt by taste

Preparation:

In cool water, you need to put slices of meat and to boil one hour.

In this time it is necessary to peel skin from potatoes, carrots, onions, and cabbage.

Potatoes need to be sliced and boiled 3 minutes.

Then grate onions, carrots, and tomatoes to fry with oil within 10 minutes on the pan.

Then fry vegetables to put in the boiling water with meat and to add dill, pepper and salt by taste and through 3 minutes turn off.

Ready! Cook ‘Borsh’ with pleasure, I think you’ll be very glad to eat this nice food!

Cook’s tip: Serve it with mayonnaise and eat hot!

RASPBERRY RICE CAKE

INGREDIENTS
18 ½ ounce package white cake mix with pudding
3 ounce package raspberry flavor gelatin
10 ounce package frozen raspberries, thawed (undrained)
4 eggs
½ cup vegetable oil
¼ cup hot water

FROSTING
10 ounce package frozen raspberries, thawed (undrained)
12 ounce carton frozen whipped topping, thawed


HOW TO PREPARE
Heat oven to 350F. Grease and flour 9x13x2 inch pan. In large bowl, combine dry cake mix and gelatin. Add raspberries with juice, eggs, oil and water; beat until well blended, about 3 minutes. Pour into prepared pan. Bake 30 to 35 minutes or until done—cool.

For frosting, in small bowl, fold raspberries and juice into whipped topping. Spread over cake. Refrigerated 2 hours. 15 servings.

A Childhood Memory

My favorite childhood memory, I have 1 sister, and 1 brother. I was living in Mexico City. I remember the vacation to the beach.

All the years my parents wanted this to be a great vacation, I remember the beautiful hotel, the big pool, the ocean, my sister and brother playing all day in the pool.

I was really excited because I enjoyed the food very much; we were eating fish, shrimp, octopus, oyster and ice cream.

I really wanted to have these moments now with my son, my husband and my daughter.

TOM –YAM-KUNG

Today I introduce a Thai recipe: TOM-YAM-KUNG or Hot and sour soup. They are called in Thailand. I always cook TOM-YAM-KUNG, and when I cook that soup, I have to look for the fresh of shrimp or frozen its good test.

Preparation time: 20 minutes

Cooking time: 45 minutes

Ingredients (serves 2-5 people)

10-15 shrimp

2 cups water

1 stalk (slice) lemon grass

½ chopped red onion

3 green onions

2 tbsp fresh lemon juice

1 tsp salt

2 tbsp coconut milk (optional)

2 hot peppers

Preparation

Clean shrimp and drain, take some shrimp core out.

While boil water and you are waiting for the water to boil.

Put slice lemon grass and red onion to the boiling water.

Add the salt and boil them for about 5 minutes.

After that put the shrimp and boil them about 2 minutes and turn stove off.

Put fresh lemon juice, green onion, and hot pepper.

Stir in coconut milk. (optional)

Cook’s Tip: Turn off stove when put fresh lemon juice, green onion, and hot pepper.

Do not cook the shrimp for more than 2 minutes.
